Orzo Salad for any Summer Occasion

Ingredients:

6 cups of boiling water or vegetable or chicken stock
Salt to taste
1 box of orzo
1/4 cup of olive oil
1 lemon (zest and juice )
1 whole cucumber peeled and diced
1 carton of cherry tomatoes quartered
1/2 cup of red onions finely diced
1/2 cup of feta cheese
Black pepper to taste
Fresh dill as garnish

Directions:

Cook the orzo in seasoned boiling water for 9 minutes only. Drain orzo and drizzle with olive oil. Toss orzo to incorporate the olive oil. Place orzo in an ice bath. Add the rest of the ingredients and toss to mix the salad. Add more salt and pepper to taste and any preferred additional items from above. Serve at room temperature or warm.
