Grown and Sexy Cookies: Lemon Pistachio Agave Cookies

I made these cookies for my beloved neighbors as a house-warming gift. They ate them, loved them and labeled them Grown and Sexy Cookies. Here’s the recipe courtesy of Oprah’s Magazine, May 2013.

Lemon Pistachio Agave Cookies:

The dough can be made up to 3 days ahead and kept chilled in an airtight container in the refrigerator.

1/2 pound (2 sticks) unsalted butter, melted cooled to room temperature
1 cup agave nectar
2 tbsp. finely grated lemon zest (from about 3 lemons)
1 tsp. vanilla extract
1 egg
2 cups all-purpose flour
1/2 cup yellow cornmeal
2 tsp. baking powder
1/2 tsp. kosher salt
1 1/2 cups chopped raw pistachios

1. In a medium bowl, whisk together butter, agave, lemon zest, vanilla and egg. In a large bowl, whisk together flour, cornmeal, baking powder, and salt. Add butter mixture to flour mixture and stir until well combined. Cover and chill dough until cold and firm 2 to 4 hours.

2. Preheat oven to 350 degrees. Line a large baking sheet with parchment paper. Place pistachios in a medium bowl.

3. Working in batches, form each cookie by shaping about 2 tbsp. dough into a ball and rolling in pistachios to coat. Arrange on prepared baking sheet, spacing the cookies about 2″ apart. Bake until puffed and golden brown on the bottom, 13 to 15 minutes. (Refrigerate uncooked dough between batches.) Set cookies aside to let cool, then serve. Cookies can be stored in an airtight container up to 2 days.

Makes 2 dozen cookies.

I was inspired to post this old video of me making a chicken pasta recipe because my neighbor had me in her kitchen this week helping her cook cod. She said I should do teaching videos.  Thank you, my walking buddy!

Turkey meatballs

I love making meatballs. Ground turkey is a nice healthy alternative. Add ground turkey to a bowl and include the following to taste: garlic salt, cumin, cayenne pepper, garlic, oregano black pepper, lemon zest and lemon juice. Also add in one whisked egg, 1/4 -1/2 cup of water and Panko bread crumbs. Combine everything together and shape meat into balls using hands. Add olive oil to a hot pan. Sear turkey meatballs until golden in color on both sides. Finish cooking the turkey meatballs in oven at (375 degrees) for 15 minutes of less.

Handmade donuts for a special friend

This a great Krispy Kreme Donut recipe.

Ingredients

Donuts

      • 2 (1/8 ounce) package yeast
      • 1/8 cup water ( 105-115)
      • 3/4 cup lukewarm milk ( scalded, then cooled)
      • 1/4 cup sugar
      • 1/2 teaspoon salt
      • 1 eggs
      • 1/4 cup shortening
      • 2 1/2 cups all-purpose flour
      • 1/2 to taste canola oil

Creamy Glaze

      • 1/4 cup butter
      • 1 cup powdered sugar
      • 3/4 teaspoon vanilla
      • 2 -3 tablespoons hot water

Chocolate frosting

    • 1/4 cup butter
    • 1 cup powdered sugar
    • 3/4 teaspoon vanilla
    • 2 -3 tablespoons hot water
    • 2 ounces milk chocolate chips or 2 ounces semi-sweet chocolate chips

Directions

  1. Dissolve yeast in warm water in 2 1/2-quart bowl.
  2. Add milk, sugar, salt, eggs, shortening and 2 cups flour.
  3. Beat on low for 30 seconds, scraping bowl constantly.
