In my culture, we’re big on marinating our meats for hours and days if we have time. These delicious lamb chops were marinated for 3 days and seasoned with rosemary, oregano, garlic, lemon zest, and salt and pepper. I seared the chops and finished them in the oven.
I served the lamb chops with a Guinness reduction sauce (remaining marinating liquid, Guinness, Worcestershire sauce, honey, butter and garlic) and simple couscous. This dish was so delicious we cleaned the plate in under 5 minutes.
